Pasta with pesto, mozzarella and sun-dried tomatoes



We all know the feeling, you're finally home from a long day at work or school and the only thing you want to do, is lay down and watch a relaxing movie. But not so fast, you still have to cook a meal :(
Well, on a night like this I tried to make a good pasta with the ingredients I found in my fridge and just putting them together, but actually I really like it so here's the recipe. Everybody knows a simple pasta pesto, but by adding some more ingredients, you can transform it into a delicious meal, and above all: you’ll be finished in less than half an hour!


Shopping list:
- Pesto
- Sun-dried tomatoes
- Cherry tomatoes
- Pine nuts
- Mozzarella
- Rucola (=Salad rocket)
- Prosciutto
- Pasta (for this recipe I prefer Fafalle or Fusilli)

1) While the pasta is cooking you can prepare the other ingredients, so start by boiling some water and add the pasta, together with some salt and olive oil.











2)  Roast the pine nuts in a pan for a few minutes, until they look slightly brown, but not black! Be careful because they burn really fast!



 3) Wash the rucola and put it in a big bowl with the sun-dried tomatoes, the mozzarella, the roasted pine nuts, the prosciutto and the cherry tomatoes.



4)Now the only thing you have to do, is add the pasta and some pesto and you’re done!

For some extra flavor, you can always add fresh herbs, for example basil.
